Searchnig for a GOOD Muffins recipe
Hi girls, I'm searchnig for a GOOD Muffins recipe, for a REALLY GOOD one. That always works and tastes like a muffin should do. The recipe I usually use gives me perfectly looking muffins but there is always that slight after-taste of...soda? Don't know exactly what after-taste is it, but I don't like it.

hmmm what are you looking for?
some kind of ground recipe, where you can add ingredients?
or a complete recipe?
do you want chocolate muffins, or with fruit, or maybe a recipe in which you use sweets?
I have about 50 different recipes, that I already tried myself and about 200 in total......

I love ALL muffins! (Not so my 'good slim figure', but who cares!!!)
For the blueberry ones I still can't find the IDEAL proportion of flour and milk (buttermilk, kefir, yoghurt... whichever you use). Baked muffins shouldn't be moist inside and they should have quite big 'holes'. Mine are either quite moist (with more buttermilk) or not so fluffy (with more flour). Grrr!
Though they look exactly like this one 'outside' (pic isn't mine) [Only admins are allowed to see this link] , I'd like to have the perfect 'inside', too.

okay here we go.....I can't find the recipe for the chocolate-muffins, so I'll have to add that one another time....
WHITE CHOCOLATE MUFFINS
you need:
160g white chocolate
190g flour
1.5 tsp baking powder (sodium bicarbonate)
0.5 tsp baking soda
1 egg
60g sugar
60ml vegetable oil
200ml buttermilk
-preheat the oven to 180°C (or 160°C circulating), prepare muffin tray
-cut 60g white chocolate in small pieces and mix it with the flour, the baking
powder and the baking soda
-whisk the egg in another bowl, add the sugar, the oil and the buttermilk and stir it
well
-add the flour-mix to the eggy-mix and stir only till the dry things are wet
-fill the dough into the muffin tray and bake it 15 to 20 minutes
-let the muffins cool for about 5 minutes, before taking them out of the tray
-melt the rest of the chocolate and dunk the muffins headfirst in the melted
chocolate

2tsp baking powder
0.5tsp baking soda
1 egg
140g sugar
80ml vegetable oil
165ml coffee (cold)
140ml buttermilk
150g powdered sugar
-preheat the oven to 180°C (or 160°C circulating), prepare muffin tray
-cut the marzipan paste in small pieces and mix it with the flour, the cacao, the baking powder and the baking soda
-whisk the egg in another bowl, add the sugar, the oil 125ml coffee and the buttermilk and stir it
-add the flour-mix to the egg-mix and stir only till the dry things are wet
-fill the dough into the muffin tray and bake it 20 to 25 minutes
-let the muffins cool for about 5 minutes, before taking them out of the tray
-mix the powdered sugar with 3-4 tbsp coffee to make a frosting
-dunk the muffins headfirst in the frosting

I just found the chocolate one.....
CHOCOLATE MUFFINS
you need:
125g butter
90g sugar
30g (soft) brown sugar
1tsp vanilla essence (you can get that like most other spices in this little shaker things)
2 eggs
200g flour
2tsp baking powder
0.25tsp salt
20g baking cacao (without sugar! if you don't get baking cacao use less sugar!)
150ml milk
12 pieces of chocolate to add as a filling (bitter chocolate, milk chocolate or whatever you like, I prefer coffee chocolate which is partly white and partly dark)
-preheat the oven to 190°C and prepare the muffin tray
-mix butter, both kinds of sugar and vanilla essence
-stir in the eggs separately
-mix the flour, the baking powder, the salt and the cacao
-slowly add the flour-mix and the milk to the butter-mix
-fill the muffin tray half-full, add the chocolate and add another tbsp of the dough
-bake 20 min

I have so many that I can't count them.....but I didn't even try half of them yet......and I can't find the blueberry-one.....but I know that I once did blueberry-muffins for a birhtday.....
